I GUESS like me you are all looking forward to some warmer weather very soon.  I have been baking when I cannot get out in the garden because of the weather.

This is a delicious and very easy cake.   Blueberries are so good for you and at the moment they are reasonably priced and very delicious whether in a cake or a fruit bowl.

APPLE & BLUEBERRY CAKE

Ingredients
½ cup (225 g) self-rising flour, sifted
¾ cup (165 g) of caster sugar
125 grams of butter, softened
1 teaspoon of vanilla extract
2 eggs
½ cup (125 ml) milk
1 apple cored, thinly sliced
¾ cup of fresh or frozen blueberries

Method
  1. Preheat the oven to 160° degrees
  2. Place flour, sugar, butter, vanilla, eggs, and milk in the bowl of an electric mixer and beat until just combined.
  3. Spoon the mixture into a greased 22 cm springform tin lined with non-stick baking paper.
  4. Top with the apple and blueberries and sprinkle with sugar.

Enjoy!

This recipe for Blueberry cake seems to be incomplete.
How long is the cake cooked for and is it cooled in the tin before turning out?
