British born and bread

I’M going back a long time with this cake recipe, which I recently rediscovered on the internet.

​My mother made this quite often, to our delight!  It is a lovely cake and so easy to make. 

BRITISH BREAD PUDDING
Serves 12
 
Ingredients
6¼ cups of whole wheat bread, cubed.
1¼ cups of milk
1 beaten egg
1/3 cup of softened butter
¾ cup of dried mixed fruit
½ cup of brown sugar
 1 tablespoon of ground nutmeg
 1 tablespoon of ground cinnamon
 
Method
  1. Heat the oven to 190 degrees.
  2. In a large bowl mix the bread and milk and set aside to soak for about 5 minutes.
  3. Stir in the egg, butter, fried fruit, brown sugar, nutmeg and cinnamon.  Mix well.
  4. Press the mixture into a 23cm square baking pan, lightly greased.
  5. Bake in a preheated oven until golden and firm to the touch, for about 35 minutes.
  6. Leave in the pan to cool then cut into squares.
  7. Cool, then remove from the tin and dust with icing sugar to serve.

Looks good and easy to make. Dried fruit or fried fruit? 😊
