Fruits of the earth

I DO like to have a vegetarian style meal sometimes.  This vegetable and rice bake doesn't sound all that wonderful but it is really very delicious. You can use any vegetable in this.

VEGETABLE & RICE BAKE
Serves 6
 
Ingredients
2 carrots diced
1 zucchini diced
1 potato diced
½ cup pumpkin diced
1 onion diced
1 sweet potato diced
150ml cream
2 tbsps unsalted butter
1 cup of cheese shredded
1 cup of water
120g rice
1 teaspoon of garlic, minced

Method
Set the oven to 180 degrees.
Add all the vegetables in a 21 x 16 x 6cm baking tin.
Add cream, water and rice and mix.
Cook for 30 to 45 minutes or until golden brown.
Stand for approximately 10 minutes to slightly cool and allow liquid to thicken.

There seems to be a discrepancy with instructions for cream.

Sorry Robin. The cream went in twice. Make that 150ml.
