Risoni with the lot

I MUST admit I’m not all that excited about summertime, but I do enjoy finding recipes for  salads, especially because we have lots of salad.vegies in the garden. Risoni is a type of pasta, a bit like rice.

SUMMER RISONI SALAD

Ingredients
400 grams of risoni
1 bunch of asparagus, trimmed & cut into 2cm lengths
200 grams of sugar snap peas
200 grams of feta cheese
½ bunch of parsley, leaves chopped
Zest and juice of 1 lemon
300 grams of smoked salmon

Method
  1. Bring water to a boiling in a saucepan and add 1 teaspoon of salt.
  2. Add risoni, simmer for 7 minutes until al dente.
  3. Add asparagus and snap peas for the last 2 minutes. 
  4. Drain, reserving ½ cup of cooking liquid.  Return reserved liquid to the pan with the risoni mixture
  5. Season, break the salmon into bite sized  pieces. & toss to combine.  Squeeze over lemon juice to serve.
